My husband loves cooking steak on the stove in a cast iron skillet- this steak with Tuscan spinach is a great recipe to mix up your regular steak night. Follow his simple sizzling steak recipe - and then use this spinach recipe as a side or a topping for the steak.
We added a baked potato and it was a perfect meal for a family dinner- and it also is a great recipe and menu to use for a Supper Club or dinner party!
1/3 cup diced onion
2 TBSP olive oil
1/2 lb fresh spinach
1/4 tsp salt
1/8 tsp black pepper
1/4 cup shredded Parmesan cheese
3/4 cup diced tomato
Saute' onion in hot oil in skillet over medium heat until onion is tender
Add spinach, salt, and pepper and let cook for about 1 minute or until spinach wilts.
Remove from heat and stir in cheese and diced tomato.
