Almost Fried Chicken is the  easiest way to enjoy a quick chicken meal! This recipe is perfect for weeknight meals and for feeding larger groups. You can substitute chicken cutlets and make them more like chicken fingers if you are serving a large crowd. This is one of my favorites for July 4th gatherings. They are quick and easy- and I can make a quick green salad or fruit kabobs while they bake. Serve as is or with your favorite dipping sauces. Here's to simple recipes that make mealtimes easier! cornflake friend chicken on black spatula in clear dish

    • 2-3 chicken breasts
    • 2 cups buttermilk
    • 2 cups Cornflake cereal
    • 1 tsp salt
    • 1/4 tsp black pepper
    1. Cut chicken breasts in half.

    2. Place chicken and buttermilk together in Ziploc bag and soak chicken overnight.

    3. Crush Cornflakes and add salt and pepper. You can crush Cornflakes in a large Ziiploc bag using a rolling pin or using a food processor.

    4. Pour crushed Cornflakes into a shallow bowl. Dredge chicken in the Cornflakes and place on pan.

    5. Bake at 350 degrees (F) for 30-45 mins. Temperature test with meat thermometer to test for doneness.

    6. Enjoy!

If you have questions, or need help- just let me know! Cheers, Lydia xo
