Veggie Meatloaf

Ingredients
  

  • 2-3 carrots
  • 1 small-medium chopped onion
  • 2 ribs of celery
  • 2 cloves garlic
  • 2 lbs. ground beef
  • 2 eggs
  • 3/4 cup oats
  • 1/4 cup milk
  • 1 tbsp Worcestershire Sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp thyme
  • 1/2 cup ketchup

Instructions
 

  • Heat oven to 375 degrees (F).
  • Place first 4 ingredients in a food processor and finely chop.
  • In a large bowl, combine all ingredients. Combine but do not over mix.
  • In a 9×13 pan lined with foil, shape mixture into a loaf.
  • Bake 1 hour, 15 mins.
  • Let stand 5 minutes before cutting.
