5-Minute Asparagus Salad

This Asparagus Salad literally takes 5 minutes to make and is one of my easy recipes for guests and for family. I am serving it as part of our Easter lunch. I always feel like the more veggies, the merrier…especially at Easter. I like to eat like a bunny, I guess. Except I also really love dessert to balance out all of these lovely vegetables. 🙂

I typically put shaved parmesan cheese on this asparagus salad, but switched it up for mozzarella cheese. I forgot to pick up the parmesan and my kids prefer mozzarella. I used fresh mozzarella and shaved thin pieces to mix throughout the asparagus. This salad can be served chilled or can also be served warm as a side dish. I like it both ways! I often serve it warm at dinner and then make enough to put away for lunch the following day as a salad. If you are making it as a salad, you can make the day ahead.

5-Minute Asparagus Salad

Ingredients

  • 1 bundle fresh asparagus
  • 1/4 cup water (more if needed)
  • 1 -2 TBSP olive oil
  • salt and pepper to taste
  • shaved parmesan cheese (or sub fresh mozzarella)
  • 1 lemon, juiced

Instructions

 

  1. Wash asparagus well. Chop into 2-inch pieces. Then, add to a pan with water and sauté over medium heat for 3-5 minutes.
  2. Remove from pan. Place asparagus in a medium bowl and drizzle olive oil over asparagus.
  3. Squeeze lemon juice over asparagus and stir.
  4. Add salt and pepper to taste.
  5. Shave cheese over asparagus. Serve warm or place in refrigerator and serve when chilled.
  6. Garnish with edible flowers before serving. (Optional)
