Cheesy Baked Chicken Enchiladas

My mom first made this cheesy, chicken baked enchilada dish for us when our extended family was together at the beach years ago- it is great for serving a crowd! To save time, you can use a rotisserie chicken (or 2) – it is a great shortcut for saving time and effort when you need it!

Cheesy Chicken Enchiladas

Ingredients

  • 1 tbsp butter
  • 1 medium onion chopped
  • 1 oz. cream cheese softened
  • 3 1/2 cup chopped cooked chicken breasts
  • 1 pkg. Monterey jack or Mexican Blend (shredded) cheese
  • 2 cups half and half
  • 8 flour tortillas (8 in.)

Instructions

  • Melt butter and sauté onions
  • Stir in cream cheese and chicken
  • Spray casserole dish
  • Spoon 3 heaping Tbs. chicken mixture in tortillas
  • Roll and place in dish
  • Sprinkle with cheese
  • Drizzle with half and half
  • Bake at 350 degrees (F) for 45 minutes covered
  • Uncover, add cheese, and then bake for 10 more minutes or until lightly browned
  • Cut into serving pieces and enjoy!
