Ok, Friends- here is my easiest go-to for a summer treat! Ice Cream Sandwiches fit any occasion and are always well-received! With a couple of choices on how to make them- and make them fit your schedule. If I have time, I am happy to whip up a batch of homemade cookies in any flavor and add ice cream between two of them to make a sandwich. But… the easiest 2 options tend to be the ones I make the most.

  1. Buy cookie dough (break and bake) and use those cookies to create the ice cream sandwiches. Bake them on a metal pan so that they are crispy rather than chewy. They will hold up better if they aren’t too soft. Let them cool completely before adding the ice cream. Top with sprinkles or add them around the edges of the sandwiches. Put them back in the freezer for a bit to set.
  2. Use cookies from the grocery store bakery. I use Publix chocolate chip cookies all of the time to make these. They are perfect. Add in sprinkles or jimmies and you have a pretty, fun, delicious dessert in no time! After you assemble the ice cream sandwiches, put them back in the freezer for a bit to set.

Easiest Ice Cream Sandwiches

Ingredients
  

  • 1 dozen chocolate chip cookies from grocery bakery (you can use any cookies you like)
  • 6 scoops vanilla ice cream (you can sub any flavor ice cream)
  • Sprinkles (optional)

Instructions
 

  • This is my go-to shortcut for the easiest ice cream sandwiches. It is so fast and simple and always a crowd pleaser. It doesn't really need a "recipe" but here is how I make them.
  • Buy 1 dozen chocolate chip cookies of your choice. For these, I used chocolate chip cookies from Publix Bakery. Adjust number of cookies based on the number of people you are serving. Each person will need 2 cookies.
  • Place one scoop vanilla ice cream in the center of one cookie. Top with a second cookie.
  • Press together to make a sandwich.
  • Roll sides in sprinkles so that they stick to the ice cream. You could add them on top of ice cream before topping with 2nd cookie, if you prefer.
    Return to freezer to set (about 10 mins.)
  • Wrap individually or stack like a pyramid and serve.
