One Skillet Chicken Fajitas
Ingredients
- 1 1/2 to 2 lbs. chicken breast thinly sliced
- 2 1/2 bell peppers sliced (or 1/2 of a red, orange, yellow, and green pepper to get the rainbow effect)
- 1 onion sliced
- 1/4 cup olive oil
- 1 1/2 tbsp chili powder
- 1 tsp cumin
- 1/4 tsp garlic powder
- 1 tsp salt
- 1/8 tsp black pepper
- 1/4 tsp pepper
- juice of half a lime
- 8-12 small flour tortillas
Instructions
- SautƩ onions and peppers in a skillet with olive oil for about five minutes or so
- Add chicken and all spices.
- Cook for about 5 minutes and test chicken for doneness by cutting into it to see the middle. If chicken is still pink inside, cook for another minute and test again.
- Continue until chicken is no longer pink and juices are clear.
- Serve in flour (or corn) tortillas
- Enjoy!
