One Skillet Chicken Fajitas

Ingredients
  

  • 1 1/2 to 2 lbs. chicken breast thinly sliced
  • 2 1/2 bell peppers sliced (or 1/2 of a red, orange, yellow, and green pepper to get the rainbow effect)
  • 1 onion sliced
  • 1/4 cup olive oil
  • 1 1/2 tbsp chili powder
  • 1 tsp cumin
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp pepper
  • juice of half a lime
  • 8-12 small flour tortillas

Instructions
 

  • SautĆ© onions and peppers in a skillet with olive oil for about five minutes or so
  • Add chicken and all spices.
  • Cook for about 5 minutes and test chicken for doneness by cutting into it to see the middle. If chicken is still pink inside, cook for another minute and test again.
  • Continue until chicken is no longer pink and juices are clear.
  • Serve in flour (or corn) tortillas
  • Enjoy!
