So easy and delicious, this lightly breaded chicken with pasta and red sauce is a powerhouse in our home. My husband makes such a great red sauce, and he makes a large batch to use in 2 to 3 recipes for the week. He usually makes spaghetti and meatballs with red sauce first. The following night, he will use it to make this chicken dish. The following night, he will typically make something like calzones or pizza using the red sauce.
Simple Chicken Served with Red Sauce and Pasta
Ingredients
- 4 boneless, skinless chicken breasts
- 1/3 cup flour
- salt and pepper to taste
- 3 TBSP olive oil
Instructions
- Slice chicken breasts horizontally to make 2 thin chicken breasts out of each one. You will have 8 thin chicken breasts when all are sliced.
- Use a meat cleaver to tenderize the chicken.
- Sprinkle chicken with salt and pepper on each side.
- Place flour in wide, shallow bowl.
- Dredge each chicken piece in flour
- Place in pan heated over med-high heat with olive oil.
- Cook about 2-3 mins. on each side of chicken or until done.
- Remove from pan and serve with a side of pasta and top with red sauce.
