Three-cheese ravioli is a great base for many meals- for this one we added chicken and spinach along with tomatoes and seasonings. It was a big hit and also looks beautiful on a plate. It makes a great dish for a weekday meal and also for when you host friends or family. Give it a try and don’t be afraid to change up the vegetables, if you like! Also, you can add chicken if you would like more protein. There are lots of ways to change this one up as you like.

3-Cheese Ravioli with Spinach and Tomatoes

Ingredients
  

  • 1/4 cup Chardonnay white wine
  • 2 TBSP olive oil
  • 1 cup fresh spinach leaves
  • 1 small tomato, diced
  • 1/4 cup shredded parmesan cheese
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1 pack refrigerated ravioli (found in refrigerated pasta section of grocery store)

Instructions
 

  • Cook ravioli per package directions and set aside.
  • Heat olive oil in a pan over med- heat and add garlic. Cook garlic until it slightly changes color- about 30 seconds to 1 minute.
  • Add wine to pan and stir until liquid reduces by about half of its volume.
  • Add salt, spinach, and tomatoes. Stir just until spinach leaves wilt and shrink in size.
  • Place ravioli on plate and top with the spinach/tomato mix.
  • Sprinkle parmesan cheese on top.
  • Enjoy!
