Basil Spinach Pesto

Ingredients
  

  • 4 cups packed fresh spinach leaves
  • 2 cups packed fresh basil leaves
  • 1/2 cup olive oil
  • 2 TBSP lemon juice, freshly squeezed
  • 2 cloves garlic
  • 1/4 cup shredded Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Place all of the ingredients in a food processor and blend for 30 seconds to a minute. Scrape sides if needed between blending. Pesto is ready to use when smooth.
