Chicken with Garlic Butter and Parsley

Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 3 TBSP olive oil
  • 1 - 2 tsp poultry seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup white wine
  • 1 TBSP garlic, minced
  • 3 TBSP butter
  • chopped fresh parsley to garnish the top

Instructions
 

  • Pound chicken using meat mallet to an even thickness.
  • In a large cast iron skillet, add olive oil over medium high heat. Add in chicken and season with poultry seasoning, salt, and pepper. Let chicken sear for 5 mins. without disturbing it.
  • After 5 mins., flip the chicken and sear on that side for 5 mins. (or until chicken is done).
  • Remove chicken from pan and set aside on a plate.
  • Next, carefully deglaze the pan by adding wine to the skillet. The wine will bubble up, hiss, and steam. :) Stay with the pan while you deglaze, turning the heat down a bit and moving the liquid around in the pan.
  • Next, add butter and let it melt into the liquid in the pan.Stir continuously for about 1 minute.
  • Add in the garlic and cook for about a minute, stirring constantly. Then, turn off the heat.
  • Add the chicken back into the skillet. Stir the sauce over the chicken to coat.
  • Serve with pasta, if desired. Sprinkle parsley on top before serving. Enjoy!
