Lime Cilantro Chicken

Lydia Menzies

Ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • freshly cracked pepper
  • 2 limes
  • 1/2 cup cilantro chopped
  • 4 boneless, skinless chicken breasts

Instructions

  • Combine olive oil, minced garlic, cumin, salt, and some freshly cracked pepper in a medium bowl.
  • Zest one of the limes (I use a small cheese grater) and then squeeze in the juice.
  • The second lime can be cut into wedges to use as a garnish for the chicken when you are ready to serve.
  • Next, slice the chicken breasts in half lengthwise to make the pieces thinner. This will give you about 8 pieces of chicken. Then cut those chicken pieces in half.
  • Place the chicken in the marinade and coat each piece well. Let the chicken marinate at least 30 mins.
  • When ready to cook chicken, heat a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 mins on each side, or until well-browned and cooked through.
  • Top cooked chicken with more fresh cilantro and a squeeze of fresh lime juice. Serve with yellow rice and green beans for a simple family meal.
