Combine olive oil, minced garlic, cumin, salt, and some freshly cracked pepper in a medium bowl.
Zest one of the limes (I use a small cheese grater) and then squeeze in the juice.
The second lime can be cut into wedges to use as a garnish for the chicken when you are ready to serve.
Next, slice the chicken breasts in half lengthwise to make the pieces thinner. This will give you about 8 pieces of chicken. Then cut those chicken pieces in half.
Place the chicken in the marinade and coat each piece well. Let the chicken marinate at least 30 mins.
When ready to cook chicken, heat a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 mins on each side, or until well-browned and cooked through.
Top cooked chicken with more fresh cilantro and a squeeze of fresh lime juice. Serve with yellow rice and green beans for a simple family meal.
