This recipe for baked Swiss cheese chicken is from a family friend who ran a restaurant and made this dish often. It is comfort food and is also very easy to make!
Baked Swiss Cheese Chicken
6 chicken breasts
2 cups herb stuffing mix
1/4 cup milk
6 slices Swiss cheese
1/4 cup butter, melted
1 can cream of chicken soup ***
Place chicken in buttered casserole dish and top each piece with a slice of Swiss cheese.
Combine milk and soup and pour over chicken.
Sprinkle stuffing mix over top.
Drizzle with melted butter.
Cover and bake at 350 degrees (F) for 50 mins.
*** If you would like to substitute for the can of cream of chicken soup, use this instead...
1 Tablespoon flour
3 Tablespoons butter
1/2 cup chicken broth
1/2 cup milk
salt and pepper to taste
1. Melt butter over medium-high heat.
2. Whisk in the flour and keep whisking until smooth and bubbly.
3. Slowly whisk in the broth and milk, bringing to a slight boil. Continue whisking until soup is thickened.
4. Salt and pepper to taste.
