My dad and I used to plant these delicious little new potatoes in our backyard garden when I was little. And, then my mom would make them taste delicious with her buttery mix of salt, pepper, butter and chives. I loved them then and still love them now. Plus, they make a really easy-to-prepare side dish for most entrees. Add these to your menu rotation and you will be so happy to have such a simple side that feels fool-proof, tried, and trusted!
Buttery New Potatoes with Parsley
1 - 1 1/2 lbs. small red potatoes (or new potatoes)
3 TBSP butter
1 TBSP salt
1/8 cup chopped fresh parsley
Wash potatoes and then place in a medium saucepan on medium heat with about 1 1/2 cups water. Bring to a boil. Add salt after water boils.
Let potatoes continue to cook over medium heat for 20-30 mins. or until potatoes are soft when you place a fork in them.
When potatoes are cooked and soft, drain all of the water from the pan. Add butter to the pan and stir to coat potatoes.
Using fork, slightly crush potatoes and then let set for about 10 minutes, covered, to soak up the salt and butter.
When ready to serve, add the fresh parsley and combine. Add salt and pepper to taste, if needed.
