When we find a recipe that has everyone going back for more, my husband likes to make it again with a few easy changes. This salmon recipe was perfect and so we wanted to add it to the "must-make again" list. It is easy, too! We like easy, how about you?
Salmon with Parsley and Panko
2 lbs. salmon filets
1/4- 1/2 cup fresh parsley, chopped
1/2 cup panko bread crumbs
1 clove garlic
Preheat oven to 400 degrees (F).
On a lined baking sheet, place salmon skin-side down. Cover salmon with a piece of parchment paper.
Place in oven and bake salmon for 10 minutes.
While salmon is baking, mix chopped parsley, garlic, and Panko breadcrumbs together in a bowl.
Remove salmon from oven and evenly coat the top with the breadcrumb mixture.
Return salmon to oven for 10 more minutes or until salmon reaches 135 degrees (F).
