Quick quiche makes dinner so simple some nights- and it is a nice change of pace! We overbought eggs this week and so we decided to serve quiche and simple sides for dinner one night. I sometimes forget how easy it is to literally whip up a couple of quiches and call it a meal! By adding the ingredients that your family enjoys most, you can tailor it to your family's tastes. It covers protein, veggies, dairy in a snap. Serve a couple of interesting sides, and the meal is hearty and so, so easy!
Quick and Easy Quiche
1 deep dish pie shell
6 large eggs
1/4 cup milk
2-3 oz. Mozzarella cheese ((can sub any cheese you like))
1 small tomato, diced
salt and pepper to taste
Stir eggs with milk in medium bowl.
Pour egg mixture into pie crust.
Sprinkle diced tomatoes evenly throughout pie.
Sprinkle cheese over the eggs and jiggle to let it sink in a bit.
Bake at 350 degrees (F) for 30 minutes.

The recipe above is a great way to begin with making quiche. You can add cooked meats, such as ham, bacon, sausage to the quiche if you would like. Experiment with different add-ins each time you make it so that the meal is a little different each time.
WHAT TO SERVE WITH QUICHE ~
The thing about quiche, is that you can serve it with breakfast items or serve it with dinner sides and it is still so delish! Some of my favorite sides to serve with quiche are
Bacon
Ham or Sausage
Spinach
Broccoli
Avocado slices
Fruit Salad
Blueberry Muffins
Grits
Toast and Jam
I keep blueberry muffin mix on hand for those days when you need a side just as quickly as the main quiche entree. They can cook side-by-side in the oven and be ready to go in a flash!
