Salmon is always a quick fix for dinner. Try this Drunken Salmon for a holiday meal and temper with savory sides, such as wild rice and a tossed salad.
Drunken Glazed Salmon
4-6 salmon filets
1/4 cup bourbon
1/8- 1/4 cup brown sugar
2 TBSP soy sauce
2 TBSP olive oil
Combine bourbon, soy sauce, sugar, and olive oil in a Ziploc bag.
Add salmon filets and marinate at least 2 hours (overnight yields best flavor)
Remove salmon from bag and place in baking dish with a small amount of water in bottom of dish.
Bake at 450 degrees (F) for 15 mins.
Serve and enjoy!
