I really love a mild scallop and was happy to have this recipe sent to me from a neighborhood publication. I am spoiled by the Bay scallops from Nantucket, and so I am always skeptical to try scallop recipes at home. But, it was too simple to resist and it turned out to be delicious. I thought I would also share with you for a summer dinner idea that is different from the norm! Let me know if you give it a try!
Baked Sea Scallops
16 sea scallops, larger (rinsed and drained )
5 tbsp butter (melted )
5 cloves garlic (minced )
2 shallots (chopped )
5 pinches ground nutmeg
1 c bread crumbs
4 tbsp olive oil
1/4 c parsley
salt and pepper
Preheat oven to 425 degrees (F)
Place scallops, melted butter, shallots, and garlic in a bowl
Season with nutmeg, salt, and pepper
Stir gently to combine and transfer to a casserole dish
In a separate bowl, combine bread crumbs and olive oil. Sprinke on sea scallops
Bake in preheated oven until crumbs are brown and scallops are done - 11-14 minutes
Salt and pepper to taste. Top with parsley, and serve with lemon wedges on side.
