I love a quick and easy meal anytime, and these black bean and Monterey Jack Quesadillas can't get much easier! These are great served with our homemade salsa and sliced avocados. This recipe also makes a great variation on Taco Tuesday! Enjoy!
Black Bean and Jack Quesadilla
12 inch (large) flour tortillas
3/4 c shredded Monterey Jack cheese
1/4-1/2 c black beans (drained)
1 tsp chopped cilantro
Butter one side of tortilla
Place in pan on stovetop, butter side down
Spread shredded cheese (fresh is better than pre-shredded) on top of tortilla
Add black beans
Add cilantro
Turn on medium/high heat
When the cheese begins to melt, fold tortilla in half. Brown on each side, flipping quesadilla as needed. Serve with salsa and avocado slices.
