A pork loin glazed with grainy mustard, brown sugar and fresh thyme is the perfect entree for a weeknight meal or a dinner party. My husband loves to make entrees and create glazes and sauces to complement them. This one is a great combination of flavors- and the brown sugar does not overpower the glaze. It's delicious, and I can't wait for you to try it!
Mustard Brown Sugar Thyme Pork Loin
2 lbs. pork loin
2 TBSP brown sugar
2 TBSP Mailie old-style mustard
1 1/2 tsp salt
1/4 tsp black pepper
1 tsp fresh thyme, finely chopped
3/4 cup white wine
Place pork loin on a plate and sprinkle liberally with salt and pepper. Let pork set on counter for 1-2 hours to bring to room temperature.
Preheat oven to 425 degrees (F).
In a cast iron skillet, heat 1 TBSP olive oil.
Place pork in cast iron pan and sear meat on all sides. This will take about 10-15 minutes.
Remove pan from heat.
While meat is still in the cast iron pan, coat the top and sides of the pork loin with the mustard and spice mixture.
Keeping the pork in the cast iron pan, put pan in oven and roast the pork for 20 mins. Insert meat thermometer and check internal temperature of meat. Continue cooking until safe temperature for pork is reached. The larger the pork loin, the more time you will want to add to cooking time.
Once cooked, set the pork loin on a plate for 5-10 minutes to rest.
While pork rests, place pan back on stovetop and add 3/4 cup white wine to deglaze the pan and create the sauce.
Reduce liquid by half.
Place sauce in a gravy boat or other small bowl to spoon on sliced pork as desired.
Slice pork, serve, and enjoy!
