My mom first made this cheesy, chicken baked enchilada dish for us when our extended family was together at the beach years ago- it is great for serving a crowd! To save time, you can use a rotisserie chicken (or 2) – it is a great shortcut for saving time and effort when you need it!
Cheesy Chicken Enchiladas
Ingredients
- 1 tbsp butter
- 1 medium onion chopped
- 1 oz. cream cheese softened
- 3 1/2 cup chopped cooked chicken breasts
- 1 pkg. Monterey jack or Mexican Blend (shredded) cheese
- 2 cups half and half
- 8 flour tortillas (8 in.)
Instructions
- Melt butter and sauté onions
- Stir in cream cheese and chicken
- Spray casserole dish
- Spoon 3 heaping Tbs. chicken mixture in tortillas
- Roll and place in dish
- Sprinkle with cheese
- Drizzle with half and half
- Bake at 350 degrees (F) for 45 minutes covered
- Uncover, add cheese, and then bake for 10 more minutes or until lightly browned
- Cut into serving pieces and enjoy!
