Greek Salad with Chickpeas (Garbanzo Beans)

A Greek salad is full of flavor yet has the simplest ingredients and dressing. It is such a great addition to a weeknight meal. The mixture of textures and colors also makes this a fantastic salad to serve when you’re hosting friends and family. This one stays in heavy rotation at our house! I hope you enjoy it just as much!

Greek Salad with Chickpeas (Garbanzo Beans)

Ingredients

  • 3 cups green leaf lettuce or mixed salad greens
  • 2 cucumbers, sliced or diced
  • 1 cup grape tomatoes, cut in half
  • 1/2 cup Kalamata olives (no pit)
  • 1/4 cup sliced red onion (optional)
  • 1/3 cup Feta cheese, crumbled
  • 15 oz. can chick peas, drained/ rinsed
  • 3 TBSP olive oil
  • 1 TBSP lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp dried basil or oregano

Instructions

  • Wash and dry all veggies. In a large bowl, combine the salad ingredients.
  • In a small bowl, combine the olive oil, lemon, salt, pepper, seasoning and whisk to combine.
  • Pour dressing over salad and toss to combine salad and dressing.
  • Enjoy!
