This Asparagus Salad literally takes 5 minutes to make and is one of my easy recipes for guests and for family. I am serving it as part of our Easter lunch- I always feel. like the more veggies, the merrier...especially at Easter. I like to eat like a bunny, I guess. Except I also really love dessert to balance out all of these lovely vegetables. :)
I typically put shaved parmesan cheese on this asparagus salad, but switched it up for mozzarella cheese. I forgot to pick up the parmesan and my kids prefer mozzarella. I used fresh mozzarella and shaved thin pieces to mix throughout the asparagus. This salad can be served chilled or can also be served warm as a side dish. I like it both ways! I often serve it warm at dinner and then make enough to put away for lunch the following day as a salad. If you are making it as a salad, you can make the day ahead.
