My mom first made this cheesy, chicken baked enchilada dish for us when our extended family was together at the beach years ago- it is great for serving a crowd! To save time, you can use a rotisserie chicken (or 2) - it is a great shortcut for saving time and effort when you need it!
Cheesy Chicken Enchiladas
1 tbsp butter
1 medium onion (chopped)
1 oz. cream cheese (softened )
3 1/2 cup chopped cooked chicken breasts
1 pkg. Monterey jack or Mexican Blend (shredded) cheese
2 cups half and half
8 flour tortillas (8 in.)
Melt butter and sauté onions
Stir in cream cheese and chicken
Spray casserole dish
Spoon 3 heaping Tbs. chicken mixture in tortillas
Roll and place in dish
Sprinkle with cheese
Drizzle with half and half
Bake at 350 degrees (F) for 45 minutes covered
Uncover, add cheese, and then bake for 10 more minutes or until lightly browned
Cut into serving pieces and enjoy!
