A Greek salad is full of flavor yet has the simplest ingredients and dressing. It is such a great addition to a weeknight meal. The mixture of textures and colors also makes this a fantastic salad to serve when you're hosting friends and family. This one stays in heavy rotation at our house! I hope you enjoy it just as much!
Greek Salad with Chickpeas (Garbanzo Beans)
3 cups green leaf lettuce or mixed salad greens
2 cucumbers, sliced or diced
1 cup grape tomatoes, cut in half
1/2 cup Kalamata olives (no pit)
1/4 cup sliced red onion (optional)
1/3 cup Feta cheese, crumbled
15 oz. can chick peas, drained/ rinsed
3 TBSP olive oil
1 TBSP lemon juice
1/4 tsp salt
1/8 tsp pepper
1/4 tsp dried basil or oregano
Wash and dry all veggies. In a large bowl, combine the salad ingredients.
In a small bowl, combine the olive oil, lemon, salt, pepper, seasoning and whisk to combine.
Pour dressing over salad and toss to combine salad and dressing.
