Thai food is one of my favorites- and basil is, too! Put them together in this Thai Basil Chicken with Rice Noodles dish, and it is such an easy and delicious dinner! The rice noodles are a nice change from regular pasta and keep the dish feeling light but filling.
Thai Basil Chicken with Rice Noodles
2 1/2 lbs chicken breasts, sliced into bite sized pieces
1 1/2 cups fresh basil leaves
6 TBSP Asian fish sauce
3 TBSP soy sauce
3 TBSP water
3 tsp sugar
4 TBSP vegetable oil or olive oil
1 onion, thinly sliced
1/4- 1/2 tsp dried red pepper flakes
4 cloves garlic
1 small head of broccoli (chopped)
1 pack rice noodles
Stir together the fish sauce, soy sauce, sugar and water in a medium to large bowl and then add the chicken and let marinate.
In a cast iron skillet or large frying pan, heat oil over medium-high heat. Add the onion slices and cook for 2 minutes while stirring.
Add garlic and red pepper to the onions and continue to cook for 30 secs- 1 minute longer.
While pan is hot, add the chicken pieces and cook for about 3 minutes. Next pour in the marinade and cook for another minute.
Remove from heat and then add basil. Stir to wilt.
Cook rice noodles according to package directions while chicken is cooking. Serve basil chicken over noodles and enjoy!
