These pork carnitas have become a go-to recipe at our house. Everyone loves them and it is simple to put the meat and spices in a Crock Pot and let it work its magic. This is a great idea for Taco Tuesday or for any day that you want something that is a crowd-pleaser. We also like making these for larger groups when needed- it is a perfect recipe to scale up if needed! Enjoy with avocados, a side salad, or rice.
Easy Pork Carnitas
2 1/2 lbs. Pork Shoulder
1 TBSP lime juice (typically one whole lime)
2 tsp salt
2 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 tsp chili powder
1 tsp onion powder
1/2 tsp black pepper
chopped fresh cilantro (optional)
Soft taco shells (small flour tortillas)
In a small bowl, stir together the lime juice and all of the spices.
Cut pork into large pieces and place in Crock Pot.
Pour lime mixture over pork, coating the meat.
Cook on low for 7-8 hours.
Check for doneness. When done, shred the pork using 2 forks.
Place in soft taco shell. Garnish with cilantro and lime, if desired.
