McCall and Scott Wilder, of Karma Farm Restaurant in Atlanta, are sharing their favorite appetizer/ side dish with us. This is one of their specialty recipes that they don’t often share- we are special! 😉 You can find two other recipes for dinner here.
Karma Farm is a gluten-free, allergy-free restaurant that is a great addition to the Atlanta foodie scene. With options often not offered in other restaurants, Karma Farm is leading the way in healthy, clean-free, stress-free cuisine in a casual setting. I love it when I find myself there for lunch- and it is also great for dinner or meals-to-go. It’s a delicious meal made with so much thought and care every time!
Shroom Bites (vegan/gf modification)
Ingredients
- 1 box of herbed Boursin cheese or Treeline vegan version. Or use the Miyokos vegan cream cheese and mix in fresh chives and other herbs as desired
- 1-2 packs of fresh, organic white or baby Bella mushrooms can vary quantity depending on size of mushrooms and quantity desired
- 1 small stem/handful of fresh chives or other green for garnish optional 1
Instructions
- Set one oven rack high and one to the middle. Preheat oven to boil.
- Carefully wash mushrooms to remove natural residues, then gently de-stem shrooms to create a little pocket.
- Place on prep area with holes facing up and lightly stuff each pocket until full without breaking delicate outer edges.
- Place filled mushrooms in a baking dish, and place on middle rack of oven for 5-8 minutes to start melting process. Check to be sure not browning too fast.
- At 8 minutes, lightly sprinkle (if desired) the tops with some finely chopped chives for color and as a garnish (this is optional to make a bit "fancier").
- For final step, use oven mitt to move baking pan up a tier to finish off and brown for 3-5 minutes minutes (depending on oven strength.) Cook times do vary based on ovens so watch carefully!
- Remove carefully, plate and enjoy!
