This chicken recipe with garlic butter and parsley is a great go-to for many meals- simply switch out the sides and you have a completely different meal each time. This time, we served it with a side of penne pasta, but you can also serve the chicken with different types of pasta, rice, cous cous, or lots of vegetables! It's a very adaptable recipe- I hope you enjoy!
Chicken with Garlic Butter and Parsley
1 1/2 lbs boneless, skinless chicken breasts
3 TBSP olive oil
1 - 2 tsp poultry seasoning
1 tsp salt
1 tsp black pepper
1/2 cup white wine
1 TBSP garlic, minced
3 TBSP butter
chopped fresh parsley to garnish the top
Pound chicken using meat mallet to an even thickness.
In a large cast iron skillet, add olive oil over medium high heat. Add in chicken and season with poultry seasoning, salt, and pepper. Let chicken sear for 5 mins. without disturbing it.
After 5 mins., flip the chicken and sear on that side for 5 mins. (or until chicken is done).
Remove chicken from pan and set aside on a plate.
Next, carefully deglaze the pan by adding wine to the skillet. The wine will bubble up, hiss, and steam. :) Stay with the pan while you deglaze, turning the heat down a bit and moving the liquid around in the pan.
Next, add butter and let it melt into the liquid in the pan.Stir continuously for about 1 minute.
Add in the garlic and cook for about a minute, stirring constantly. Then, turn off the heat.
Add the chicken back into the skillet. Stir the sauce over the chicken to coat.
Serve with pasta, if desired. Sprinkle parsley on top before serving. Enjoy!
