A Pink Poinsettia cocktail is the perfect complement to a pink and green holiday brunch! When I saw these Pink Poinsettia napkins by Giddy Paperie, I loved the design and the bright, happy colors. A non-traditional spin on Christmas brings so many creative ideas to mind- I had a ball designing this Christmas Brunch idea for The Supper Club- and I am thrilled to share the signature cocktail that would be so perfect to serve at the party! The Pink Poinsettia napkin on the table in the photo below is my inspiration for this delicious cocktail!

For a Pink Poinsettia, you only need 3 ingredients and then cranberries for garnish.I like to freeze the cranberries to help keep the drink cool.
Pink Poinsettia Christmas Cocktail
2 TBSP Petron Orange Liqueur (chilled) ((can sub another brand if needed))
1/2 tsp 100% Pure Cranberry Juice (chilled)
Champagne (chilled)
3 Frozen Cranberries (for garnish)
Combine orange liqueur and cranberry juice in one coupe glass or champagne flute.
Top off with champagne.
Garnish with 3 frozen cranberries.
This makes one drink. When making this drink for a small crowd (4 or fewer people), I buy a miniature champagne bottle.
Serve the cocktails with a Giddy Paperie napkin lining the tray or platter. Add a plate of crackers and cheese for a simple but beautiful presentation.
The drink is so pretty and festive! When making for a group of 4 or fewer people, you can buy a miniature bottle of champagne rather than a large bottle. Also, because you will add flavors to the champagne, you can go with a less expensive champagne. If you're like I am and are lured by the pretty Veuve bottle, you can save the Veuve for another time when you're enjoying champagne by itself.
