I have tried a million different ways to make macaroni and cheese- using different cheeses, using flour and not using flour, adding spices, etc. etc., and my family always comes back to this simplest version as their favorite. In my family, the Keep it Simple, Sweetheart version is requested most often. I like to make it on the stovetop rather than baking it in the oven because it seems to retain its creaminess that way.
One tip for serving macaroni and cheese is to consider the presentation. A pretty bowl, rustic bakeware, or individual ramekins will make it feel special. So, here it is in all of its simplistic glory...I hope you and your family and friends enjoy!
Keep it Simple Mac & Cheese
8 oz elbow macaroni
1/4 cup butter
1 cup whole milk
1 tsp salt
8 oz. sharp Cheddar cheese, shredded ((1 cup))
8 oz. American cheese, shredded ((1 cup))
Cook macaroni by using the directions on the package but leave out the salt in this step.
After pasta has cooked, drain well. I leave my pasta in a colander while I prepare the cheese sauce.
In a medium pot, melt butter over low heat. Slowly add milk and stir or whisk constantly over medium heat. Mixture will thicken and bubble.
Next, add grated cheeses and salt and stir until creamy.
Add in cooked pasta and cook over medium heat for about 5 minutes.
Turn off heat and let stand for 5 more minutes before serving.
Garnish with thyme or parsley when serving.
A note about the American cheese...
I have always gotten it from the deli at our Publix grocery store. My husband thinks that is silly and simply buys a package of sliced Kraft American cheese singles. Feel free to experiment based on your time and preference. :)
Macaroni and Cheese is one of those basic recipes that is good to have in your rotation- typically, most everyone enjoys this comfort food. Mac and cheese also goes well with most meals as a side~ especially if you're feeding little ones or teenagers. I love how easily it works for an indoor picnic party or supper club night! Enjoy!
