The first time I realized how quickly salmon cooked, I was hooked on making it weekly. I like to mix up the way we bake it or serve it, but I always love how easy it is to make a quick meal with it! We paired this with pasta and vegetable salad and the whole family was happy!
Simple Salmon with Parmesan Cheese Crust
2 lbs. salmon filets
1/4 cup fresh parsley, chopped
1/2 cup parmesan cheese, grated
2 cloves garlic, finely minced
Preheat oven to 400 degrees (F).
On a lined baking sheet, place salmon skin down and cover salmon with a piece of parchment paper.
Place in oven and bake for 10 minutes.
Take the salmon out of the oven and add cheese, parsley, and garlic to top of salmon. Coat evenly and put back in the oven (uncovered) for about 10 more minutes. Crust will bake to a light, golden brown. Internal temperature of salmon should register 135 degrees (F) according to safe cooking guidelines.
