We love to freeze them and use them for smoothies~ and now, here is another great and delicious idea! Banana Chocolate Chip Cupcakes
I slightly adapted this delicious recipe from Sally’s Baking Addiction (one of my favorite sites!!). Sally offers a variety of frostings that go perfectly with these banana cupcakes. I kept it simple and went with a chocolate frosting.
I always have bananas that ripen too quickly and I just don’t want to waste them. So why not make some yummy banana cupcakes!
1/2 cup salted butter, softened
1/2 cup golden brown sugar
3/4 cup white sugar
3 eggs
3 mashed bananas
2 teaspoons vanilla extract
2 cups unbleached, all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup mini chocolate chips
Pre-heat oven to 350 degrees.
Cream butter, sugar and vanilla together. Add one egg at a time and mix throughly. Add mashed bananas. Mix. Add in one cup of flour at a time and mix to combine. Add salt and baking soda. Mix. Slowly add in buttermilk, stirring with each addition. Fold in chocolate chips.
Line a muffin pan with liners. I like to use an ice scream scoop to measure out my batter. I fill the ice cream scoop about 3/4 full and drop into a baking cup. Fill all baking cups.
Bake for about 17 minutes. Insert a toothpick to ensure the cupcakes are cooked.
Milk Chocolate Frosting
3/4 cup salted butter, softened
2 teaspoons vanilla extract
7 1/2 cups powered sugar
1/2 cup cocoa powder
1/3 cup milk
Combine butter and vanilla. Add powdered sugar in small addition. Mixing each time and alternating with milk. Add cocoa powder. Mix until completely combined. Depending on how thick you want the frosting you can add more milk to thin it or more sugar to thicken it.
