Cream Cheese Stuffed Chicken

Ingredients
  

  • 4 chicken breasts, boneless
  • 8 oz. cream cheese, softened
  • 1/2 cup Italian bread crumbs
  • 1 TBSP parsley, chopped finely
  • salt and pepper to taste

Instructions
 

  • Cut chicken breasts in the middle but not all the way through so that you can stuff the chicken.
  • Mix softened cream cheese and chopped parsley together in a bowl.
  • Add cream cheese mixture to chicken and fold chicken over to close the cheese inside. Secure with a toothpick.
  • Sprinkle chicken with a layer of Italian breadcrumbs.
  • Salt and pepper to taste.
  • Bake chicken at 350 degrees (F) for approximately 45 mins.

We serve it with a grain, pasta, or potato side dish and a veggie or salad. Egg noodles have been getting a lot of play at our house lately because our kids really like them.  Feel free to sub any side dishes that you like. This chicken dish goes well with most everything! Enjoy!
