Cilantro lime chicken has been a big hit in our house this summer. It is a little bit tangy and offers a different flavor that my family enjoys. It is versatile, too. You could serve it as a modified Taco. Tuesday meal or actually make tacos with this – just cut the chicken small enough to fit the taco shells. My son likes this chicken with salsa and my daughter likes it plain- either way, it is an easy, quick way to feed them something hot and homemade!
Lime Cilantro Chicken
Ingredients
- 2 tbsp olive oil
- 4 cloves garlic minced
- 1/2 tsp cumin
- 1/2 tsp salt
- freshly cracked pepper
- 2 limes
- 1/2 cup cilantro chopped
- 4 boneless, skinless chicken breasts
Instructions
- Combine olive oil, minced garlic, cumin, salt, and some freshly cracked pepper in a medium bowl.
- Zest one of the limes (I use a small cheese grater) and then squeeze in the juice.
- The second lime can be cut into wedges to use as a garnish for the chicken when you are ready to serve.
- Next, slice the chicken breasts in half lengthwise to make the pieces thinner. This will give you about 8 pieces of chicken. Then cut those chicken pieces in half.
- Place the chicken in the marinade and coat each piece well. Let the chicken marinate at least 30 mins.
- When ready to cook chicken, heat a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 mins on each side, or until well-browned and cooked through.
- Top cooked chicken with more fresh cilantro and a squeeze of fresh lime juice. Serve with yellow rice and green beans for a simple family meal.
