Thai food is one of my favorites- and basil is, too! Put them together in this Thai Basil Chicken with Rice Noodles dish, and it is such an easy and delicious dinner! The rice noodles are a nice change from regular pasta and keep the dish feeling light but filling.
Thai Basil Chicken with Rice Noodles
Ingredients
- 2 1/2 lbs chicken breasts, sliced into bite sized pieces
- 1 1/2 cups fresh basil leaves
- 6 TBSP Asian fish sauce
- 3 TBSP soy sauce
- 3 TBSP water
- 3 tsp sugar
- 4 TBSP vegetable oil or olive oil
- 1 onion, thinly sliced
- 1/4- 1/2 tsp dried red pepper flakes
- 4 cloves garlic
- 1 small head of broccoli (chopped)
- 1 pack rice noodles
Instructions
- Stir together the fish sauce, soy sauce, sugar and water in a medium to large bowl and then add the chicken and let marinate.
- In a cast iron skillet or large frying pan, heat oil over medium-high heat. Add the onion slices and cook for 2 minutes while stirring.
- Add garlic and red pepper to the onions and continue to cook for 30 secs- 1 minute longer.
- While pan is hot, add the chicken pieces and cook for about 3 minutes. Next pour in the marinade and cook for another minute.
- Remove from heat and then add basil. Stir to wilt.
- Cook rice noodles according to package directions while chicken is cooking. Serve basil chicken over noodles and enjoy!
