Chicken soft tacos get an upgrade with the addition of black beans, tangy white sauce, and guacamole. These tacos are perfect for any Taco Tuesday and also make a great “build your own” recipe for a group of guests. The chicken recipe can be used for anytime you want an easy but delicious quick base entree or simple chicken nuggets.

Chicken Soft Tacos with Black Beans

Ingredients
  

  • 1/2 cup all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. chili powder
  • 1/8 tsp. garlic powder
  • 1 1/2- 2 lbs. chicken breasts, cut into 1 inch pieces
  • 3-4 TBSP olive oil
  • 8 small flour tortillas
  • 1 can black beans, warmed over medium heat
  • 1- 2 cups shredded Monterey Jack cheese
  • 1- 2 cups shredded lettuce

Instructions
 

  • Mix together flour, salt, pepper chili powder, and garlic powder in medium bowl.
  • Cut chicken into 1 inch pieces and place in flour mixture. Toss to coat chicken in flour mixture.
  • Heat olive oil in a skillet over mid-high heat and cook chicken 5-10. mins or until cooked.
  • Warm flour tortillas on low heat in oven while cooking chicken.
  • Serve tortillas layered with chicken, lettuce, black beans, shredded cheese.
  • Add white sauce (optional) and serve with guacamole and chips.
