Chicken and wild rice casserole is one of the easiest meals to make when you need something quick for the whole family to enjoy for dinner. My mother used to make this often when I was growing up, and I rely on it to help me out when time (or energy) is tight. Add a vegetable side dish or a salad and the whole meal is ready!

Chicken and Wild Rice Casserole

Ingredients
  

  • 4 chicken breasts
  • 2 boxes Uncle Ben's Wild Rice
  • 1 envelope French Onion Soup Mix
  • 1 can cream of chicken soup **(I will provide a substitute for the cream of chicken soup below)**
  • 2 - 3 cans water (measured in the soup can)

Instructions
 

  • Place chicken breasts in a 9x13 casserole dish
  • Mix together all other ingredients and pour over the chicken
  • Bake at 350 degrees (F) for 90 mins. or until chicken reaches 165 degrees internal temp.

Notes

**If you prefer not to use cream of chicken soup, you can quickly mix these ingredients together and use as a substitute. 
3 Tablespoons butter
1 Tablespoon flour
1/2 cup milk
1/2 cup chicken broth
salt and pepper to taste
  1. Melt the butter in a small- medium saucepan.
  2. Add the flour and whisk until smooth and bubbly
  3. Slowly whisk in the chicken broth and the milk- whisking constantly.
  4. Bring to a slight boil and continue to whisk until the soup thickens.
  5. Season with salt and pepper
