Every week in the winter deserves a fabulous soup idea- and this super greens soup with chicken added is chocked full of goodness. I feel great serving this to my family and pair it with pumpernickel sandwiches. It sounds like they might balk at all of the greens, but the flavors come together so well! Delicious, warm, and nutritious!
Super Greens Soup with Chicken
Ingredients
- 1 cooked rotisserie chicken, shredded or chopped
- 1 medium sweet onion, chopped
- 1- 2 cloves garlic
- 2 zucchini squash, chopped
- 4-5 stalks celery, chopped
- 1 cup green beans, chopped
- 1/3 cup fresh Italian parsley (flat parsley), chopped
- 1/8 cup fresh cilantro, chopped
- 6 cups chicken broth
- 4 cups baby spinach
- 1 TBSP lemon juice
- salt and pepper to taste
- 2 15 oz cans chick peas

Instructions
- Saute garlic and onions in olive oil in a large pot over medium heat for 5-6 mins.
- Add in chopped celery, green beans, and zucchini. Stir and cook for 2-3 minutes before adding in parsley and cilantro. Sprinkle with salt and pepper.
- Add broth. Bring to a boil. Simmer for 20 minutes.
- Next, add in shredded chicken, spinach, lemon juice, and chick peas and stir until spinach wilts.
- Before serving, be sure to make the olive oil drizzle for the top of the soup.
- Serve soup in bowl and drizzle oil over top of soup. Add cilantro or parsley for garnish and serve. Enjoy!
