This chicken recipe with a salsa and mustard marinade is one of the very first dishes that I learned to make when I lived on my own after college. It is very quick, very easy, and very tasty! When my daughter was little, she would help me make this by making the marinade- it really is that easy!
As a note- you can substitute the type of mustard that you use for a slightly different flavor. In the photo below, the chicken is made with a brown mustard that had heavy seeds- which is why it looks very dark. My personal favorite is Gulden's Mustard, but everyone seems to have their own favorite. Don't be afraid to experiment to find the one that suits you best! What to serve as a side? Yellow Rice or white rice is always good with this chicken recipe. I personally love mashed potatoes with it! Add a vegetable of your choice, and dinner is served!
Chicken with Salsa and Mustard Marinade
1 cup salsa
1/8- 1/4 cup Dijon mustard
2 TBSP lime juice (typically the juice of one large lime)
2 TBSP butter
1/2 tsp salt
1/4 cup cilantro, chopped
dollop sour cream for garnish, if desired
4 chicken breasts, boneless, skinless
Mix together salsa, mustard, and lime juice. Place in large zip bag and add chicken breasts. Make sure chicken is well coated, Marinate the chicken for at least 30 mins.
Melt butter in large skillet over medium-high heat.
Remove chicken from marinade and add to skillet. Reserve the marinade to add in later.
Brown chicken on both sides, about 10. mins. Add marinade to skillet and cook about 5 more minutes. Chicken should be tender and glazed with the marinade.
Remove chicken from skillet and place on a platter.
Boil marinade over high heat for 1 minute. Add in cilantro and stir.
Serve marinade over chicken. Add a dollop of sour cream, if desired.
Serve and enjoy!
