This chicken recipe with garlic butter and parsley is a great go-to for many meals- simply switch out the sides and you have a completely different meal each time. This time, we served it with a side of penne pasta, but you can also serve the chicken with different types of pasta, rice, cous cous, or lots of vegetables! It’s a very adaptable recipe- I hope you enjoy!
Chicken with Garlic Butter and Parsley
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts
- 3 TBSP olive oil
- 1 - 2 tsp poultry seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup white wine
- 1 TBSP garlic, minced
- 3 TBSP butter
- chopped fresh parsley to garnish the top
Instructions
- Pound chicken using meat mallet to an even thickness.
- In a large cast iron skillet, add olive oil over medium high heat. Add in chicken and season with poultry seasoning, salt, and pepper. Let chicken sear for 5 mins. without disturbing it.
- After 5 mins., flip the chicken and sear on that side for 5 mins. (or until chicken is done).
- Remove chicken from pan and set aside on a plate.
- Next, carefully deglaze the pan by adding wine to the skillet. The wine will bubble up, hiss, and steam. 🙂 Stay with the pan while you deglaze, turning the heat down a bit and moving the liquid around in the pan.
- Next, add butter and let it melt into the liquid in the pan.Stir continuously for about 1 minute.
- Add in the garlic and cook for about a minute, stirring constantly. Then, turn off the heat.
- Add the chicken back into the skillet. Stir the sauce over the chicken to coat.
- Serve with pasta, if desired. Sprinkle parsley on top before serving. Enjoy!
